Now that the holidays are over and the children are back at school, it's time for me, yes me, to start eating properly again. As usual, I over-ate during the holidays and have probably gained about 10 pounds (too scared to jump on a scale and see the truth). I had a friend stop by for lunch yesterday and tried a new recipe for us. It was delicious, filling and I didn't feel bloated afterwards.
Here's the recipe:
Endive, Arugula and Pear Salad (serves 2)
1 1/2 teaspoons of Dijon Mustard
2 tablespoons Balsamic Vinegar
3 tablespoons Olive Oil
1/4 teaspoon salt & freshly ground black pepper to taste
1 bunch Arugula, rinsed and tough stems removed and discarded
2 medium Belgian Endive, trimmed and julienned
1 Bosc Pear, peeled, cored and diced or thinly sliced (you can use any type of pear you like)
Handful of chopped walnuts (optional)
In a small bowl, blend mustard and vinegar. Slowly whisk in olive oil, salt and pepper.
Combine arugual, endive, pear and walnuts. Add dressing, toss and serve.
We had artisian multi-grain bread with this salad too.
I used to teach at Barnes & Noble University (Secrets of the Spas) and this was one recipe I always wanted to try but never got around to it. Now I'm glad I did! Enjoy!!
